What You’ll Need to Cook a Breakfast Chorizo Scramble
First, you’ll need chorizo. We normally use pork chorizo, but the store we went to only had beef and that works just as well. Next, you need eggs and we used eight for this serving size. Optionally, you can use turmeric. And then you’ll also want salsa and one avocado. And to make it easy on yourself, slice it before you start cooking.
With eight eggs, you’ll make two large servings or four small servings. If you want more, or less food, just change up the number of eggs.
Cooking Chorizo Scramble on the Blackstone
First, heat the griddle on medium high. Then add the chorizo and start chopping it up until it starts to brown. It normally takes about three to four minutes of chopping and scrambling up the chorizo before it starts to brown.
Once the chorizo looks good form it into a well. What this does is it prevents the egg from just going right into the grease trap. So even if it isn’t a full circle, just make sure the chorizo is blocking the path so that egg doesn’t drain off.
Pour the eggs in the middle of the chorizo and work quickly to mix it together to get the egg to cook before it starts running down the grease trap. The bottom normally ends up with some egg and grease that can just be scraped into the grease trap.
Scramble the egg and chorizo together until the egg is cooked. At that point, you can add some turmeric if desired. If not, it will still taste good. Just sprinkle enough on to lightly cover it and then keep mixing it together.
And by the way, to scrape all of this, you can use one spatula or two spatulas or the scraper tool. I find just one spatula is easiest on my wrists. The scraper tool works great for scrambling stuff like this and also for cleanup but I find it just bothers my wrists since it has no flex.
So just keep mixing it together and scrambling it until the egg is completely cooked and it looks good to you. At that point, you’re ready to move it onto the plates. To finish it, just add some of your favorite salsa and then top it with the sliced avocado.

Chorizo Scramble Recipe
Ingredients
- Chorizo (Pork or Beef)
- 8 Eggs
- Turmeric
- Salsa
- 1 Avocado (Sliced)
Instructions
- Heat the Blackstone griddle on medium high.
- Add the chorizo and start chopping it up until it starts to brown. (About 3-4 minutes.)
- Once the chorizo looks good form in into a well.
- Pour the eggs in the middle of the chorizo and work quickly to mix it together to get the egg to cook before it starts running down the grease trap.
- Scramble the egg and chorizo together until the egg is cooked.
- Add turmeric if desired. Sprinkle enough on to lightly cover it and then keep mixing it together.
- Keep mixing it together and scrambling it until the egg is completely cooked and it looks good to you.
- Move it off of the Blackstone and onto plates.
- To finish it, just add some of your favorite salsa and top with sliced avocado.
Serving Size: Creates 2 large servings or 4 small servings. To make more or less food just change how many eggs are used.
